Ingredients 🍯
- 5 tablespoons of Japanese soy sauce
- 5 tablespoons of mirin
- 2 tablespoons honey
- 600g boneless skinless salmon fillet
- 3 handfuls of small lettuce leaves
- 1 cup cherry tomatoes, halved
- 1 avocado, peeled and sliced
- 2 spring onions, thinly sliced
- 2 tablespoons of toasted sesame seeds
Method ⚙️
- Put the soy sauce, mirin and honey in a small saucepan and heat, stirring, until the honey dissolves.
- Remove from heat and cool.
- Place salmon in a lightly oiled roasting pan just large enough to hold it.
- Pour the soy mixture over the top and turn the salmon over so that the old skin is facing up.
- Marinate for 1 hour.
- Preheat oven to 200C.
- Turn the salmon over and place in the oven for about 10 to 15 minutes or until just cooked through.
- Brush the marinade on the salmon occasionally during cooking.
- Remove salmon from oven and set aside.
- Place Cos lettuce in a wide, shallow bowl.
- Put the tomatoes, avocado and spring onions on top.
- Break the warm salmon into bite-sized pieces and place on top.
- Pour the marinade over the salmon.
- Sprinkle with sesame seeds.
- Serve with lemon wedges to squeeze
