- 2kg pork chops, cut into individual ribs
Ingredients for the marinade
- 2 tablespoons of vegetable oil
- 6 shallots, finely diced
- 6 cloves of garlic, minced
- 6 tablespoons finely grated fresh ginger
- 1/2 cup Hoisin sauce
- 2 cups of tomato sauce
- 1 cup honey + 1/4 cup to finish
- 2 tablespoons of rice vinegar
- 2 teaspoons sesame oil
- 1/2 teaspoon chilli flakes
Method ⚙️
- Heat oil in a large skillet over medium heat. Add shallots, garlic and ginger and cook for about 5 minutes until translucent, stirring often.
- Add remaining ingredients and simmer for 15 minutes. Remove from heat.
- In a large bowl, mix half the basting sauce with the ribs, making sure they are all covered. Marinate for a few hours or overnight.
- Preheat the oven to 150°C and place the ribs in a large roasting tin. Pour in the remaining sauce to cover the ribs evenly. Cover with foil and bake for 2 hours, turning and basting the ribs every 20-30 minutes.
- Increase the oven temperature to 200°C, remove the foil and drizzle with an extra measure of honey. Bake for a further 10-15 minutes, keeping a close eye on the ribs to prevent them sticking or burning.
